Did you know food service has different systems? Well, now you know. A food system is an integrated program in which the purchase, preparation, storage,  food and beverages service, equipment, and techniques needed to achieve these goals are fully coordinated for quality,  minimum labor, maximum customer satisfaction, and cost control.

There are various types of food service systems—for example, the conventional food service system is the most common. Others include centralized food service systems, decentralized food service systems, and self-service food service systems. Cafeteria food service systems, hospital food service systems, and nursing home food service systems are also used in specific instances. 

This post will cover the four types of food service systems, types of food service, and CRM systems, together with their advantages.

There are four types of food service systems which are;

  • Commissary( central production unit)
  • Ready prepared
  • Conventional service
  • Assembly/serve.

Commissary( Central Production Unit)

This is a central production kitchen with centralized food purchasing. It has delivery options to off-site facilities for final preparation.  They use large, sophisticated types of equipment for preparation.

Ready Prepared  Many menu items are held and produced for service; a unique feature is separating preparation and service. The food is not for immediate use.
 Conventional/ Traditional Traditionally used menu items are prepared in the kitchen and held for a short time until served earlier; the food is prepared on the premises, including a bakery, a butcher shop, and vegetable preparation units. This is the most common type of food service system. It's usually found in restaurants.
Assembly/ Server Assembly system was used in the fast food industry, just like in restaurants and hospitals.  The pre-prepared foods are purchased from the processing industry.

  • English/ Family Service

With this service, the host participates actively in providing the service. The waiter brings food on platters, and after the host's approval, they place the patterns on the tables. 

The host may make food portions and serves the guests or permit the waiter to serve. The waiter takes the platters around to serve or allows the guests to help replenish their plates. 

It's a common family service in specialist restaurants where clients spend longer time on the premises.  

  • Gueridon Service

Here, partially cooked food from the kitchen is transferred to the Gueridon Trolly for complete cooking. The partial cooking is done near the guest table to achieve a specific food appearance and aroma and to demonstrate showmanship.

Also, it offers a complete food view. The waiter is required to perform the cooking role and be dexterous partially. 

  • Banquet French Service 

In this service, food platters are prepared in the kitchen. The servers then take the platters to the guest tables. The waiter places food on the guests' plates using two large silver forks in their serving hands.

The waiter serves every food item, from platters to the guest's plates. Guests are served from the left. Anything else added to a guest's plate by the waiter after it has been placed in front of the guest(salad dressing, soup in a bowl, sauce on dessert) is part of this type of service. 

  • American/ Plate Service

American service is a pre-plated service. The food is served to the guests' plates in the kitchen and brought to the guest. The kitchen sets the portion and accomplishments served with the dish and the overall color and nutrition balance. 

American service is done from the guest's right side and is typically used in coffee shops where service is required to be fast. 

  • Russian/ Silver Service  

With this type of service, food is cooked tableside. Then the waiter puts the food on platters and passes them on the tableside. Guests help themselves to assemble plates.  Russian service is done from the left.
